and I had to try it… Bruh! I’ve made it twice already! It’s delicious and so easy to make. I made low-cal Gnocchi (as you can see on the pic & vids), and I also made low-cal zucchini noods and they were fantastic! I’ll be trying this recipe soon with fettuccine to whip up a little low-cal fettuccine Alfredo action 🔥
Low-cal Vegan (if you skip the cheese) Creamy Pasta. Serves ✌️
Ingredients
- heads of garlic
- ½ lemon, juice
- Salt & Pepper
- -tbsp Olive oil
- Your choice of pasta, cooked
- Bread crumbs (optional)
- Fresh herbs, thyme works well (optional)
- Parmesan cheese (optional but cheese is life, just sayin’)
Directions
- Cut the top of each head of garlic, wrap individually with foil paper, place in the oven at 00F for 0 minutes. Unwrap and let cool down for a few minutes.
- While your garlic is in the oven, cook your pasta and season your breadcrumbs by cooking them on a little bit of olive oil, adding chopped herbs, salt and pepper.
- Squeeze garlic into a large bowl, add lemon juice, about tbsp of olive oil, salt and pepper. Mix well. Dats it! You got your gorgeous creamy sauce! Mix in pasta and season to taste. Serve on a plate, sprinkle breadcrumbs and parmesan on top.
- ENJOY and have fun with it! You can add anything to the sauce, sautéed veggies and meats go very well with this recipe.
