Skillet Jerk-Butter Shrimp

Oh, please don’t you rock my boat… Skillet Jerk-Butter Shrimp served with warm bread for dunking! 🤤 This is one of my fave shrimp recipes to cook at home, Island inspired baby! and it’s just so easy to make ❤️ I could drink this sauce like water! Recipe serves✌️⁠

Ingredients

  • -0 shrimp, peeled, deveined, no tail (I used -0 shrimp per pound)⁠
  • -cloves garlic, minced ⁠
  • tsp red pepper flakes (optional)⁠
  • tsp curry powder ⁠
  • -sprigs of fresh thyme⁠
  • ½ cup white wine ⁠
  • -tbsp butter, but follow your heart on this one⁠
  • ½ shallot or ¼ onion, finely diced.⁠
  • tomato, diced, seeds removed. ⁠
  • Cilantro or chives, chopped (optional)⁠
  • Olive oil ⁠
  • Kosher Salt ⁠
  • Freshly ground black pepper (if not using chilli pepper flakes) ⁠

Directions

  1. Make sure shrimp is clean and deveined. Pat dry using a paper towel. In a medium bowl, mix shrimp with garlic, red pepper flakes (or black pepper), curry powder, salt and about a tbsp of olive oil. Mix well. ⁠
  2. In a pan or skillet, heat up about a tbsp of olive oil and sear the shrimp for about 0 seconds per side. Put shrimp on the side. ⁠
  3. Using the same pan, add shallots/onions and thyme, sweat shallots for a minute or so and deglaze with white wine. Let simmer for one minute and add butter. Keep stirring while butter melts. Add diced tomato and chopped cilantro/chives, stir for a few seconds, and then add the shrimp back in the pan with all those juices. Mix well and season to taste. Serve with warm bread and ENJOY!⁠
