Easy Peasy Soufflé Pancakes

Delicate af, like me 🙃 Souffle Pancakes are the truth and now you can make them at home 😊 Not only delicious, but low-carb 🙌 and honey, don’t worry if you mess up your first pancake or first 2 lol It’ll only help you build character! ⁠

Ingredients

  • eggs⁠
  • tbsp milk⁠
  • tbsp flour⁠
  • tsp baking powder⁠
  • Dash of vanilla extract⁠
  • Sugar, granulated⁠
  • Oil⁠
  • Water ⁠

Directions

  1. Using dry bowls, separate the yolks and egg whites. To the yolks: add milk, vanilla extract, sift flour & baking powder and mix well. Put on a side. ⁠
  2. Using a mixer, beat the egg whites while gradually adding sugar until you reach a stiff peak.⁠
  3. Using a spatula, fold the meringue into the batter little by little. Make sure to do this gently until there are no white lumps. ⁠
  4. Lightly oil a non-stick pan over low heat. Gently scoop batter onto the pan, don’t flatten – little fluffy clouds is what you want. Pour a little bit of water in the pan and cover with a lid. Let cook for -minutes. Be super delicate with these babies when flipping over, you basically want to gently roll them over and cook for another 0 seconds or so. Don’t cover and don’t cook for too long or they will deflate.⁠
  5. Serve immediately, top with your fav toppings, whipped cream would be magic. I kept mine classic: powder sugar, salted butter and maple syrup. ENJOY!⁠
