Ingredients
- egg yolks
- tsp mustard, preferably Dijon
- ½ lemon juice
- ½ cup butter, unsalted (if using salted, skip salt)
- Salt
- Freshly ground black pepper or cayenne pepper
Directions
- In a blender, add egg yolks, lemon juice, mustard, salt & pepper. Pulse or blend at the lowest speed for 0-0 seconds.
- In a small pot, melt the butter at low temp, stirring or moving the pot in a circular motion while butter melts (this helps to make sure the heat doesn’t break the fat from the dairy.)
- Once the butter melts completely, pour it slowly in the mix while the blender is going at the slowest speed. Taste the sauce, season with salt and lemon juice if needed. VOILA! Your
